A quick and healthy meal that many special diets can enjoy.
2poundsof fishCod, Mahi-Mahi, and Halibut all work well
2Tlemon pepper seasoning
Olive oil for drizzling
1white or red onionthinly sliced
Lettuce leaves to wrap fish inand/or thinly sliced cabbage to serve on the side.
Sliced avocado for garnish
3large or 4 small limesfor the zest and juice
2garlic clovesfinely chopped
Season the fish with lemon pepper and drizzle olive oil on top. The fish can be pan-fried, broiled or grilled, and should only take about 4 minutes per side to cook.
Use a grater or microplane to remove the peel from the limes, making a zest. Cut limes open and squeeze out the juice. Stir together the mayonnaise, garlic and lime zest. Slowly add the lime juice until the flavor and consistency of the dressing are to your taste.
Drizzle the dressing over the fish, lettuce leaves and/or cabbage and garnish with the sliced onion and avocado.
